Microwave Acorn Squash Recipe

Ingredients

  • 2 medium acorn squash
  • 1/4 cup packed brown sugar divided
  • 2 tablespoons butter divided
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper optional

Instructions

  1. Cut squash in half, cutting the same direction as the grooves.
  2. Scoop out seeds and discard – or dry them out and plant them next year. Place squash cut-side down on a microwave-safe dish.
  3. Cover and microwave for 10-12 minutes until tender.Microwave Acorn Squash
  4. Flip squash over, so it is cut-side up. Place 1 tablespoon of brown sugar and 1/2 tablespoon of butter in the center of each half; sprinkle with salt and pepper.
  5. Cover and microwave on high for 2-3 minutes, or until heated through.

Hawaiian-Style Fried Rice Recipe

Ingredients

  • 12 ounces Portuguese sausage 12 ounce package of smoked sausage works
  • 4 eggs
  • 3 tablespoons green onions 3-4 stalks
  • 2 tablespoons sesame oil
  • 4 cups white rice cooked
  • 3 tablespoons shoyu soy sauce
  • 2-1/2 tablespoons oyster sauce

Instructions

  1. Dice sausage and cook until browned; drain and set aside.

  2. Scramble the eggs, breaking them into small pieces as they cook; set aside.

  3. Dice green onions; set aside.

  4. Heat sesame oil over medium-low burner.

  5. Add rice, shoyu, and oyster sauce; mix until rice is evenly coated.

  6. Stir in sausage, eggs, and green onions; mix until all ingredients are thoroughly combined.

Recipe Notes

 

  • This is hands down my favorite fried rice recipe that I’ve had. It’s absolutely ‘ono (delicious)!
  • You can usually find oyster sauce and sesame oil in the ethnic food isle at the grocery store. Wal-Mart has them in their “Asian” section.

Pizza Puffs Recipe

Pepperoni Puffs

Ingredients

  • 1 5 oz package sliced pepperoni
  • 6 oz cream cheese
  • 1 8 oz packages Refrigerated Crescent Dinner Rolls

Instructions

  1. Preheat oven to 375 degrees.
  2. Chop pepperoni into very small pieces – the smaller the better
  3. Mix the pepperoni and cream cheese until pepperoni is spread evenly throughout the mixture.
  4. Pizza PuffsSeparate crescent rolls into individual triangles. Cut these into thirds, making 3 small triangles out of each one; flatten.
  5. Evenly drop a spoonful of pepperoni/cream cheese mixture onto each triangle.
  6. Fold the sides up and pinch to seal. Place on a cookie sheet.
  7. Pizza PuffsBake at 375 for 10 minutes, or until they start to brown.

Ingredients

  • 1/2 Cup Fresh Espresso
  • 1/4 Cup Sugar
  • 2-1/2 Cups Milk
  • 1 Tbsp. Pectin Optional

Instructions

  1. Add sugar to espresso; still until dissolved. Stir in remaining ingredients. Chill and serve cold.

Recipe Notes

Pectin can be found in the canning section of your grocery store and is used to thicken the drink. Unflavored gelatin can also be used as a substitute. I think the drink is just fine without adding either, so I leave them out.

Lobster Macaroni and Cheese Recipe

Lobster Macaroni and Cheese

Ingredients

  • 7 Tbsp Butter
  • 1 Clove Garlic minced
  • 1/2 Medium onion finely chopped
  • 1/3 Cup all-purpose flour
  • 1-1/2 Cup Heavy Cream
  • 1-1/2 Cup Milk
  • Course Salt
  • Ground Pepper
  • 1 lb. Coarsely chopped cooked lobster
  • 4-1/2 Cups mixed grated cheeses such as Cheddar, Swiss, or Parmesean
  • 1 Cup Panko breadcrumbs

Instructions

  1. Preheat over to 400.
  2. Cook macaroni about 1 minute less than the directions call for. Drain, rinse with cold water, and set aside.
  3. While pasta is cooking, melt butter over medium heat in a large saucepan. Remove 3 tablespoons of melted butter to a bowl; set aside. Add onion and garlic; cook until browned. Add flour; cook 1 minute while stirring. Add heavy cream and milk; whisk until smooth. Bring to a boil. Reduce to a simmer; cook until sauce has thickened, about 2 to 3 minutes. Stir in 3/4 teaspoon salt and 1/2 teaspoon pepper.
  4. Remove from heat. Fold in cheese, lobster, and macaroni. Place in shallow 4-quart baking dish. To bowl of butter, stir in breadcrumbs; sprinkle over macaroni. Bake uncovered until topping is golden, 15 to 20 minutes. Let cool 5 minutes before serving.

Crescent Cinnamon Rolls Recipe

Ingredients

Rolls

  • 1 tube 8 count Pillsbury Crescent Rolls, unrolled and separated

Filling

  • 5 tablespoons butter softened
  • 1/4 cup white sugar
  • 2-1/2 teaspoons cinnamon

Glaze

  • 2 tablespoons butter melted
  • 1/4 cup + 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375 degrees.
  2. Place the unrolled and separate crescent rolls on an un greased rimmed cookie sheet(one with sides).

Filling

  1. In a small bowl, mix together the butter, sugar and cinnamon
  2. Assemble
  3. Evenly spread the cinnamon butter over the crescent rolls and roll up tightly.
  4. Place tip side down on the cookie sheet.
  5. Bake for 10-12 minutes.

Glaze

  1. In a small bowl, mix together the butter, powdered sugar and vanilla until smooth.
  2. Place in a zip lock bag and snip a tiny corner off.
  3. Drizzle the glaze over the cinnamon rolls.
