Method
- Cook pasta according to package. Drain and rinse with cold water.
- Heat olive oil in large skillet. Add chicken and cook 5-7 minutes, or until cooked through. Transfer chicken to bowl.
- Cook the onions in the same skillet for 3-5 minutes, until softened and translucent. Add garlic and cook for 30 seconds. Add salt and pepper.
- Sprinkle the flour over the onion mixture and stir. Cook for 1-2 minutes. Whisk in milk and dried mustard. Stir in mozzarella and cheddar cheese. Cook until melted.
- Add chicken and pasta to cheese mixture and stir thoroughly.
- Serve with freshly grated Parmesan cheese.
