Skillet Chicken Macaroni & Cheese

Ingredients
  

  • 8 ounces elbow macaroni
  • 2 tablespoons olive oil
  • 1 pound chicken breast skinless, boneless, chopped into small pieces
  • 1 medium onion chopped
  • 2 teaspoons garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons flour
  • 2 cups milk
  • 1 teaspoon mustard dried
  • 1 cup mozzarella Cheese shredded
  • 2 cups cheddar cheese shredded
  • 1/4 cup Parmesan cheese grated

Method
 

  1. Cook pasta according to package. Drain and rinse with cold water.
  2. Heat olive oil in large skillet. Add chicken and cook 5-7 minutes, or until cooked through. Transfer chicken to bowl.
  3. Cook the onions in the same skillet for 3-5 minutes, until softened and translucent. Add garlic and cook for 30 seconds. Add salt and pepper.
  4. Sprinkle the flour over the onion mixture and stir. Cook for 1-2 minutes. Whisk in milk and dried mustard. Stir in mozzarella and cheddar cheese. Cook until melted.
  5. Add chicken and pasta to cheese mixture and stir thoroughly.
  6. Serve with freshly grated Parmesan cheese.
